Have you ever tried to make calzone at home? I think it’s about time, because I have a  quick and easy recipe for you: calzone stuffed with cheese and bacon, but you can add anything else you want!

Ingredient

For dough:

  • 1 kg of flour hard
  • 60 g of sugar
  • 25 g of salt
  • 100 g butter EPIRUS brand, Corfu type “50-50”
  • 1 egg
  • 9g dry yeast
  • 500 g of lukewarm water
  • For the filling:
  • 250 g of tomato sauce
  • 600 g grated gouda cheese
  • 12 slices of bacon or 12 slices of smoked turkey

For the sauce:

  • Olive oil
  • 1 medium onion
  • 1 clove of garlic
  • 5 ripe tomatoes grated
  • Salt
  • Pepper
  • Sugar

Execution

  1. For dough: Start by putting lukewarm water, yeast, sugar and 2 tablespoons of flour in the blender bin. Wait 10 minutes for the yeast to activate, pour the egg, salt, remaining flour, Epirus 50-50 butter into the bin and stir until it becomes dough. Put a little flour on our counter and over the dough. We divide it into 12 pieces of 100g, pour some flour and cover with a towel for ½ hour. Then sprinkle our table with flour and open each dough ball in a round shape. Then spread a tablespoon of the tomato sauce that we made in the half of each sheet, and add smoked turkey or bacon. Sprinkle with the grated cheese. Wrap the sheet giving it a half-moon shape and fold the edges. Bake for 13 minutes at 200 degrees in preheated oven!
  2. For the tomato sauce: In a saucepan, add olive oil and sauté the garlic and onion unti brown, the add the tomato, salt, pepper and sugar and boil for about 10 minutes.
