A tasty and easy in the making dish from Mexico!
Ingredient
- 2 chicken breasts (fillets)
- 3 peppers (green, red, yellow)
- 1 onion
- 2 tbsp of olive oil
- Mixture of spices (1 tsp of salt, 1 tsp of pepper, 1 tsp of sugar, 1 tsp of paprika, 1/2 tsp of cumin, 1/2 tsp of smoked paprika)
- 2 limes
- 150g of cheese mix
- 6 tortillas
- 2 avocado
For the side salsa:
- Yoghurt:
- 250g Yoghurt
- ½ lime (juice and zest)
- Salt, Pepper
- Tomato salsa:
- 2 tomatoes
- fresh coriander
- Salt, Pepper
- 1 lime (juice, zest)
Execution
- Slice the chicken and vegetables (onion, peppers) into thin strips and sauté in a pan with olive oil on high heat.
- Shortly before it’s ready, pour the spices we’ve mixed into a bowl. Stir well and turn off with lime.
- In a low heat pan place the tortilla and pour a little cheese to melt; in the center we add the mixture with chicken and peppers. Remove from the pan.
- Mix the ingredients for our side salsas (each salsa to a different bowl) and add some in each tortilla.
- We wrap and serve by putting on the side and the salsa bowls for those who want to add extra salsa. We can put a few slices of avocados in each tortilla.
