chicken burgers with baked potatoes a light and delicious recipe!
Ingredient
- 1 kg of minced chicken
- 1 onion
- 1 egg white
- 150 gr. oat flakes
- 1 tomato
- 2 tbsp. mustard
- 2 tbsp. parsley (only its leaves), finely chopped
- 2 tbsp. mint (only its leaves), finely chopped
- 70 gr. milk
- 3 tbsp. olive oil
- salt
- freshly ground black pepper
For the potatoes
- 5 medium potatoes
- juice of 2 lemons
- 2 tbsp. mustard
- 1 tbsp. dried oregano
- 3 tbsp. olive oil + extra for shaping burgers
- 1 tbsp. fresh thyme (its leaves only)
- salt
- freshly ground pepper
- 300 gr. water
Execution
- Put the tomato (after previously washing it and removing the seeds) and the onion (after removing the sprout) in the multi-machine with the knives and beat until our ingredients are mashed.
- Then add the oats and milk and beat again.
- Add the mustard and olive oil, and beat our mixture again.
- In a large bowl, pour the minced chicken, the mixture that we have beaten in the food processor, the parsley and the mint, the egg white, salt and plenty of freshly ground pepper, and shape wearing cooking gloves until our ingredients are homogenized.
- Cover the bowl with a transparent film and place it in the refrigerator for 30 minutes.
For the potatoes
- In a bowl pour the juice from the lemons, mustard and olive oil, and stir using a hand whisk.
- Add the water in two portions, stirring with the hand wire in between.
- Add the oregano, stir and set the bowl with the marinade aside until needed.
- We take our potatoes, wash them well and without peeling them, cut them into thin curly slices.
- Add salt and freshly ground pepper to our potatoes and -finally- add to the bowl with our potatoes and marinade.
- Mix well so that the marinade goes everywhere and throw the potatoes with the marinade in the pan, making sure to spread them evenly throughout the pan so that they are cooked properly.
- Sprinkle with fresh thyme and start to shape our burgers to add them to the pan.
- Take the minced meat mixture out of the fridge and shape it into 8 burgers, wetting our hands with olive oil from time to time.
- Carefully place our burgers on the potatoes and bake in a preheated oven at 180 for 45 minutes.
- Once they are ready, we remove the pan from the oven, serve our food and enjoy.
