Ingredient
Pastry puff braids
- 1 puff pastry sheet
- 150gr. hazelnut praline
- 1 egg whipped
Chocolate Snail
- 1 puff pastry sheet
- 1 tbsp flour
- 100gr. chocolate praline
- 1 egg whipped
Chocolate Palmiers
- 1 tbsp flour
- 1 puff pastry sheet
- 170gr. chocolate praline
- 1 egg whipped
Execution
Pastry puff braids
Preheat the oven to 190 degrees. Divide a sheet of puff pastry into 4 pieces. We add praline on each piece and wrap it in a roll. Cut in the middle vertically and wrap it by creating a braid, smear the edges with the egg. Transfer to a baking pan that has been laid, grease again with egg and bake for 14 minutes.
Chocolate Snail
Open the puff pastry with the rolling pin. With a spatula spread on the half of the praline side and close over with the rest. Cut into small strips (12-13 lanes). We hold with our fingers and turn the strips in different ways (each piece should end up like two roll that close in the same way). Wrap like a snail. Add some of the beaten egg with a brush and bake in a preheated oven at 190 degrees for about 12 minutes.
Chocolate Palmiers
“Open” the puff pastry well with a rolling pin, flour our table and spread the praline all over the sheet. We roll on both sides (from right and left) ending in two rolls, which will “meet” in the center. Cut into small chunks (around 14 pieces) and transfer them in the baking pan that we have laid labels. Add some more egg with a brush. Bake in a preheated oven at 190 degrees for 12 minutes.
