Christmas turkey breast fillet with groats

Christmas dinner means turkey! This time we do not make it stuffed, but we try an equally delicious variation of it! Enjoy!


  • 1 turkey breast
  • vegetables for the tray

For the marinade:

  • 3 tbsp of mustard dijon
  • 2 tbsp of balsamic vinegar
  • 1 tbsp of honey
  • 3 tbsp of olive oil
  • 2 tsp garlic powder
  • 1 tsp of salt
  • 1 tsp of smoked paprika
  • various herbs (rosemary, thyme, sage)

For the groats:

  • 500 gr. groats
  • 1000-1100ml. hot water
  • 1 onion
  • 2 tbps of raisins
  • 2 mushrooms
  • 4 slices of bacon
  • 10 apricots dried
  • 100 gr. Pine seeds
  • 2 tbsp butter
  • 100ml white wine
  • 1 cube of vegetable broth
  • thyme
  • 1 pomegranate (seeds)


  1. For the turkey: In a bowl we mix all the ingredients of the marinade and spread them over the turkey breast, we make sure the marinade goes everywhere. You should do this step the day before you cook the turkey. Chop the vegetables (carrot, onion, celery) and add them in the pan with some olive oil and water. Place the turkey on top and bake in a preheated oven at 180 degrees for about 45 minutes, if we have a thermometer to be at 77 degrees. Remove from the oven and allow 10 minutes to rest. Then cut into slices. If we want we can mash the vegetables of the pan and make a tasty sauce for the turkey.
  2. For the groats: Put the warm water in a bowl and pour the groat. Allow it to absorb all the liquid. In a pan, saute the remaining ingredients with butter, then add the wine. Add the groat and mix. Remove from the fire and add the pomegranate, so that it keeps its color.
