Ingredient
For the crepes:
- 1 cup of flour for all uses.
- 1 cup of milk
- 4 eggs
- a little salt
For the minced meat:
- 750gr. minced beef (chuck)
- 2 tbsp olive oil
- 1 onion
- 1 clove of garlic
- 100ml white wine
- 1 tbsp. of tomato paste
- 150gr. grated pecorino cheese
- 1 egg
- 1 cinnamon stick
- 150gr. tight béchamel
- Salt Pepper
For the béchamel:
See the best recipe for béchamel not only for our cannelloni, but also for all the recipes that have béchamel!
To set up:
- 250gr. tomato sauce
- 200gr. grated pecorino cheese
Execution
For the crepes:
- Put all the ingredients in a large bowl and mix with a hand whisk. Bake the crepes in a non-stick pan and keep them aside.
For the minced meat:
- Saute the minced meat in olive oil until it turns brown, add the chopped onion, continue to sauté, add the tomato paste, the cinnamon, season with salt and pepper and quench with wine. Boil the minced meat over medium to high heat for 15 minutes. If necessary, add a little water. Remove from the heat and put the minced meat in a colander, we do this because we do not want extra liquids in the minced meat.
- When it cools down a bit, add the béchamel, the egg and the grated cheese.
To set up:
- Spread the crepes on a counter.
- Spread some cheese on the crepes and put the minced meat in the center.
- Roll by rolling the crepes one by one, closing well on all sides.
- Put a little tomato sauce in a pyrex so that it has moisture underneath and place all the crepes next to each other.
- Add again a little tomato sauce on top (either from a jar, or tomato sauce that we have left over) and sprinkle with grated cheese, to make a nice crust.
- Bake in a preheated oven at 200 degrees for 15 minutes.
