Crispy chicken with spice crust and green salad with petimezi

Delicious, crispy chicken with a wonderful crust of spices that make your chicken even more enjoyable! Accompany it with the wonderful salad with a surprise ingredient: the petimezi!


  • 1 chicken cut into 8 portions
  • 150gr. butter at room temperature
  • 4 tbsp. of breadcrumb

For the spice mixture:

  • 1 tbsp. of grated cumin
  • 1 tbsp. of smoked paprika
  • 1 tbsp. of grated coriander
  • 1 tsp. of cinnamon
  • 1 tbsp. of grated anise
  • 1 tbsp. of grated spice
  • Salt, Peppe

For the salad:

  • Mixed green salad (arugula, lettuce)
  • Vegetables cut into sticks (peppers, carrots, cucumbers, spring onions)

For the dressing:

  • 200 ml olive oil
  • 40 ml red vinegar
  • 1 clove of garlic
  • 1/2 green pepper
  • 2 tbsp. of petimezi
  • 1 tsp. of mustard
  • Salt, Pepper




  1. Put the spices, butter and breadcrumbs in a bowl. The butter should be at room temperature so that it can be incorporated with the other ingredients.
  2. Spread half the amount of butter on the chicken. Place it on a grill that will rest on a baking tray, put water in the baking tray. We do this so that the chicken does not come into contact with the pan and the water.
  3. Put the remaining mixture with the butter in the chicken.
  4. Bake at 160 degrees for 45 minutes.
  5. Finally raise the temperature to 190 degrees and cook for another 20 minutes or until the chicken is crispy.
  6. Serve with salad

For the salad:

  1. Wash the salad and put it in pieces in a large salad bowl. Add the vegetables cut into thin sticks.

For the dressing:

  1. Add all the ingredients to the multi and mix.
