    • 3 zucchini grated
    • 1 carrot grated
    • 3-4 broccoli bouquets (finely chopped)
    • ½ onion (finely chopped)
    • 2 eggs
    • Parsley, dill, spearmint (finely chopped)
    • 100gr. self rising flour (gluten free)
    • 3 tsp baking powder (gluten free)
    • 100gr. “Feta” cheese

    1. Put the 2 eggs in the mixer and beat them for 3-4 ‘(with the wire). Until the eggs are ready, chop the herbs.
    2. Grate the zucchini on the rough side of the grater, add salt and put them in a small strainer to remove all their liquids.
    3. Add the flour and baking powder to the eggs mix and beat until the mixture is homogenized.
    4. Grate the carrot. Chop the broccoli, onion and feta. Add them to the bowl, along with the grated zucchini and the herbs and mix up.
    5. Place the mixture on the muffin paper forms.
    6. Bake at 190 degrees in a preheated oven for 20-25 minutes. Enjoy!
