I do not think there is a more enjoyable fast food than homemade wrapped souvlakia! Whether you are a fan of pork or chicken, try my favorite meal with two surprise sauces!
Ingredient
For the pork souvlakia:
- 500 gr. pork neck
- 3 tbsp. of olive oil
- 1 tbsp. of lemon juice
- 1/2 small glass of white wine
- 1 small onion
- 1 tsp. of rosemary
- Salt, Pepper
- Peppers
- Onions
For the chicken souvlakia:
- 500 gr. chicken thigh
- 3 tbsp. of olive oil
- 1 tbsp. of lemon juice
- 1/2 small glass of white wine
- 1 clove of garlic
- 1 tbsp. of smoked paprika
- 1 tbsp. of yoghurt
Pork sauce:
- 200 gr. katiki DOMOKOS
- 1/2 cucumber
- 1 clove of garlic
- Dill
Chicken sauce:
- 2 tbsp. of mayonnaise
- 2 tbsp. of ketchup
- 1/2 tbsp. of mustard
- 1 tbsp. of soy sauce
- 1 tbsp. of worcestershire sauce
For the serving:
- Pies for souvlakia
- Onion
- Tomato
- Parsley
Execution
For the pork souvlakia:
- Cut the pork neck into 4cm cubes.
- In a bowl, mix all the marinade ingredients, put the pieces of pork there, stir and leave for a while in the fridge to marinate.
- Dip 4-5 skewers in water (this helps to prevent burns during baking). Pass the pieces of pork on the skewerand in between if we want, we put onion, tomato, peppers.
- Bake either in the grill pan, or in the oven or on the grill.
For the pork sauce:
- We will make a different tzatziki.
- Grate the cucumber in the grater, salt and squeeze it by hand to remove the liquids.
- In a bowl add the cottage cheese, yogurt, grated garlic and chopped dill.
For the chicken souvlakia:
- Cut the chicken thigh into pieces.
- In a bowl, mix all the marinade ingredients, put the chicken pieces, stir and leave in the fridge to marinate for a while.
- Dip 4-5 skewers in water (this helps to prevent burns during baking). Pass the chicken pieces on the skewerand in between if we want, we put onion, peppers.
- Bake either in the grill pan, or in the oven or on the grill.
For the chicken sauce:
Put all the ingredients in a bowl and mix.
