We put chickpeas and white beans in water from last night. The next day we boil them in separate saucepans until they are softened. We also put the lentils and the black-eyed pots in boiling pots to boil. They take 30-40 minutes, depending on the size. Be careful not to melt.
Allow to cool. Chop all the ingredients and put them in a bowl along with ginger, salt, olive oil and lemon juice and lime juice.
Strain the legumes and mix with the rest of the ingredients. Put in the fridge for at least 1 hour and serve stirring with rocket or lettuce. Maintain up to 3 days in the refrigerator.
