Choose the most ripe melon and make the easiest and coolest melon sorbet!
- 1/2 kg of melon
- 2 cups of water
- Juice of 1 lemon
- 1 cup of sugar
- 3 tbsp. of glucose
- Put the melon and lemon juice in the blender bucket and beat them until they are mushed up. Transfer the puree to a bowl and refrigerate.
- Heat the water in a saucepan over medium heat, add the sugar, glucose and cook for only 2 minutes (if you boil the syrup it will crystallize more). Remove from the heat and allow the syrup to cool completely.
- In a bowl pour the melon puree and syrup and mix with a silicone spatula. Put the mixture for 1-2 hours in the refrigerator, covered with cling film.
- Then put the mixture in the ice cream machine and prepare the sorbet according to the instructions of the device. Pour the mixture into a metal ice cream pan or large metal bowl, cover with cling film and place in the freezer for at least 2 hours.
