Choose the most ripe melon and make the easiest and coolest melon sorbet!


  • 1/2 kg of melon
  • 2 cups of water
  • Juice of 1 lemon
  • 1 cup of sugar
  • 3 tbsp. of glucose


  1. Put the melon and lemon juice in the blender bucket and beat them until they are mushed up. Transfer the puree to a bowl and refrigerate.
  2. Heat the water in a saucepan over medium heat, add the sugar, glucose and cook for only 2 minutes (if you boil the syrup it will crystallize more). Remove from the heat and allow the syrup to cool completely.
  3. In a bowl pour the melon puree and syrup and mix with a silicone spatula. Put the mixture for 1-2 hours in the refrigerator, covered with cling film.
  4. Then put the mixture in the ice cream machine and prepare the sorbet according to the instructions of the device. Pour the mixture into a metal ice cream pan or large metal bowl, cover with cling film and place in the freezer for at least 2 hours.
