Pancakes with nuts and honey is a classic British dish. Their slurry is very fluid and forms a thin layer at the bottom of the pan. It is also similar to the French crêpes and the Italian Crespelle.

Ingredient

  • 300g of hard flour
  • 1 tsp of dry yeast
  • ½ spoonful of cooking soda
  • 1 tsp of salt
  • 1 tbsp sugar
  • 400ml lukewarm milk
  • olive oil for the pan
  • butter
  • 5 tbsp of honey
  • walnuts

Execution

  1. In a bowl, dissolve the yeast and sugar in the milk, which is mixed with 100ml of lukewarm water. Leave the mixture in a warm place for 15 minutes until it makes foam.
  2. Mix flour, soda and salt into bowl. We form a hole in the middle and pour the yeast mixture. Beat the mixture from the center out to homogenize. Add drops of water if necessary. Cover with a wet towel and leave for 45 minutes until bubbles appear.
  3. Put in a frying pan with some oil and with a ladle or tablespoon (depending on the size we want to give) add the mixture to moderate heat. Allow to cook for 5 minutes or until bubbles and turn them on the other side. Continue the remaining ones until the mixture is over. Serve the pancakes with a good butter, honey and walnuts.
