Amazing pasta salad with penne, vegetables and cottage cheese that you make in a few minutes and you can have it in your office as lunch or for a light dinner!


  • 200gr. miniature penne
  • 400gr. grilled vegetables (eggplant, zucchini, mushrooms, tricolor peppers)
  • 3 tbsp. of parsley
  • 3 tbsp. of spring onion
  • 2 tbsp. of pine nuts
  • 3 tbsp. of cottage cheese

For the dressing:

  • 1 clove of garlic
  • 2 tbsp. of balsamic cream
  • 1 tbsp. of mustard
  • 1 tbsp. of red vinegar
  • 2 tbsp. of honey
  • 1 tbsp. of thyme
  • 1 cup olive oil
  • Salt Pepper


  1. Boil the penne in salted water for as long as the package says. Strain, add plenty of cold water and a little olive oil so that they do not stick.
  2. Roast the vegetables in a frying pan and cut them into cubes. In a large bowl put the penne, the grilled vegetables, the chopped parsley, the spring onion and the roasted pine nuts.

For the dressing:

  1. Put all the ingredients in the multi with half of the amount of olive oil, mix well and then add the rest and mix.

To set up the salad:

  1. Put half of the dressing in the bowl, stir and transfer to a salad bowl. Put the cottage cheese on the salad.
  2. Keep the rest of the dressing for next salads or to accompany a piece of chicken, for example.
