Rice noodles with chicken and vegetables (gluten free)

  • 1 chicken breast fillet
  • 1 small broccoli (chopped)
  • 1 garlic clove
  • 4tbsp soy sauce
  • 300gr. rice noodles
  • ½ red pepper (sliced)
  • ½ green pepper (sliced)
  • 1 tbsp spring onion
  • 40gr. grated cabbage
  • 1 grated carrot
  • 1 lime
  • 2 eggs
  • 2tbsp coriander (chopped)
  • 1 cup water
  • Salt & pepper
  • Chili flakes


  1. Open the chicken fillet in 2 pieces, slice each piece in 4-5 sticks.
  2. Peel and chop the garlic. Chop the broccoli, the peppers. Grate the carrot and cabbage.
  3. Place the noodles in a bowl, add boiling water and let soak for 10 minutes.
  4. Place a pan on heat, add olive oil and sauté the chicken in high-intensity heat. Add salt & pepper.
  5. Add garlic and sauté for 1 more minute. Add the vegetables and pour over soy sauce. Add water and cook for 2 minutes.
