Rice noodles with chicken and vegetables (gluten free) View Larger Image 10 minPreparation 15 minBaking Time 4Servings Ingredient 1 chicken breast fillet 1 small broccoli (chopped) 1 garlic clove 4tbsp soy sauce 300gr. rice noodles ½ red pepper (sliced) ½ green pepper (sliced) 1 tbsp spring onion 40gr. grated cabbage 1 grated carrot 1 lime 2 eggs 2tbsp coriander (chopped) 1 cup water Salt & pepper Chili flakes Execution Open the chicken fillet in 2 pieces, slice each piece in 4-5 sticks. Peel and chop the garlic. Chop the broccoli, the peppers. Grate the carrot and cabbage. Place the noodles in a bowl, add boiling water and let soak for 10 minutes. Place a pan on heat, add olive oil and sauté the chicken in high-intensity heat. Add salt & pepper. Add garlic and sauté for 1 more minute. Add the vegetables and pour over soy sauce.
