A Mediterranean recipe for all hours. 10 minPreparation 20 minBaking Time 3Servings Ingredient For the marinade: 3 (black)chicken’s breast fillets 2tsp sweet paprika 1tsp smoked paprika 1tsp cumin 2tsp salt 1tsp pepper 2tsp sugar For the salad: 500gr. string beans 500gr. spiny chicory (“stamnagathi”) 300gr. katiki cheese 3tbsp ground almonds Spearmint & parsley Olive oil 2 lemons 1tbsp mustard Execution Mix the spices in a bowl and marinate the chicken. Heat a pan over medium heat and cook the chicken fillets on both sides. In case of large fillets, add some water. For the salad: Cut off the edges of the string beans, wash and boil for 4-5 minutes. Cut off the edge of the spiny chicory (“stamnagathi” ), let cool and mix with the cold string beans. Mix the lemon juice, the mustard and the olive oil in a bowl and add the dressing to our vegetables (beans & spiny chicory). Mix well. Add the spearmint and parsley and mix again.
