Ingredient

  • For the marinade:
  • 3 (black)chicken’s breast fillets
  • 2tsp sweet paprika
  • 1tsp smoked paprika
  • 1tsp cumin
  • 2tsp salt
  • 1tsp pepper
  • 2tsp sugar
  • For the salad:
  • 500gr. string beans
  • 500gr. spiny chicory (“stamnagathi”)
  • 300gr. katiki cheese
  • 3tbsp ground almonds
  • Spearmint & parsley
  • Olive oil
  • 2 lemons
  • 1tbsp mustard

Execution

  1. Mix the spices in a bowl and marinate the chicken. Heat a pan over medium heat and cook the chicken fillets on both sides. In case of large fillets, add some water.
  2. For the salad:

Cut off the edges of the string beans, wash and boil for 4-5 minutes.

  1. Cut off the edge of the spiny chicory (“stamnagathi” ), let cool and mix with the cold string beans.
  2. Mix the lemon juice, the mustard and the olive oil in a bowl and add the dressing to our vegetables (beans & spiny chicory). Mix well.
  3. Add the spearmint and parsley and mix again.
  4. Slice the chicken fillets and serve with the salad. Use katiki cheese and almonds as toppings.
