Summer without ice cream is not possible! And what ice cream? Incredible, original sandwiches with ice cream, will become your favorites this summer!
Ingredient
For the cookies:
- 1 cup of sugar
- ¼ cup of fresh milk
- 4 tbsp. of unsalted cow butter
- ¼ cup of cocoa powder
- 1 ½ cup of oat flakes
- ½ cup of chopped hazelnuts
- ½ tsp. of vanilla extract
For the ice cream:
- 3 egg yolks
- ½ cup of sugar
- 1 ¼ of fresh milk
- 1 cup of mascarpone
- 1 tsp. of orange zest
Execution
For the ice cream:
- Pour the yolks and sugar into a bowl and beat with a hand mixer until white and fluffy.
- Add the milk, mascarpone, vanilla and lemon zest, bring to a boil, stirring constantly, until the mascarpone dissolves and is incorporated into the milk.
- Once it boils, remove from the heat and add the yolk mixture. Stir quickly and continuously until the mixture is homogenous. Pour the mixture back into the pot and simmer on low heat for 15 minutes until thickened.
- Leave it to cool. Put it in a metal bowl and put it in the freezer for 2 hours.
- Then take it out of the freezer and beat it with the mixer for 2 minutes and put it back in the freezer. Repeat the process of beating and freezing for another 3 times.
For the cookies:
- Pour the sugar, butter, cocoa and milk into a saucepan and place over medium heat.
- Heat the mixture for about 2 minutes, until the sugar dissolves and the butter melts.
- Remove from the heat and add the oat flakes and vanilla extract. Mix well with a silicone spatula to combine the ingredients.
- Lay a baking sheet with non-stick paper and with a spoon pour the mixture little by little until you make 30 cookies. Allow the cookies to cool and set for about 15 minutes.
For the ice cream sandwiches:
- You take a cookie, fill it with ice cream and then cover it with another cookie. Continue the same process for the other cookies.
