Spaghetti with pesto and cherry tomatoes – For the pesto:
• 2 bunches of broad-leaved basil
• 80 g pine nuts
• 80 g of olive oil
• 2 sc. garlic
• 1 tbsp lemon juice
• 80 g grated parmesan
• ½ etc. salt
• freshly ground pepper
Spaghetti with pesto and cherry tomatoes – For spaghetti:
- 1 tbsp olive oil
- 330 g cherry tomatoes acorn cut in half
- 2 cl. garlic
- ½ chili
- 1 lemon, zest and juice
- 350-400 g linguine
- 6-8 tbsp basil pesto
- 2 tbsp roasted pine nuts

- We start roasting the pine nuts in a pan on a medium heat, when it is roasted we take it out and transfer it to a plate, we salt it and let it cool.
- Put the basil leaves in a multi with a little water, stir to mash, you may need to stop, scrape the sides and continue mixing.
- Add the pine nuts, garlic, lemon juice, parmesan, salt, pepper and mix well.
- Put the ingredients of the multi in a bowl and finally incorporate the olive oil.
- At this point if we want we can add the olive oil to the multi and mix to make a thick pesto like mayonnaise.

- Heat the oil in a pan over medium heat.
- Add the cherry tomatoes, season well and fry for 4-5 minutes, stirring occasionally, until they begin to soften and caramelize.
- Add the garlic, chili and lemon zest, lower the heat and cook for 2-3 minutes.
- At the same time, boil the linguini in salted water for 5 minutes.
- Drain, holding a cup of cooking water.
- Mix the pesto, lemon juice and water from the linguini, using tongs to mix them all together and overlap.
- Put the linguini with the pesto in a deep tureen and on top of the candied cherry tomatoes
