Stracciatella is an ice cream flavor made with milk, whipped cream and pieces of dark chocolate. Originally created in Bergamo, northern Italy, it is inspired by the homonym soup made from egg and broth, a delicacy popular in Rome. Here I suggest it in an easier version!
Ingredient
- 3 cups of full-fat milk
- 1 ¼ cup of sugar
- 300 ml whipped cream
- 1 vanilla
- 5 egg yolks
- 100 gr. chocolate couverture in flakes
Execution
- Heat the milk well. In a bowl, beat the yolks with the sugar. Add the hot milk little by little to the mixture of sugar and eggs and stir. Put the mixture back in the pot, lower the heat and stir constantly until it starts to set.
- Remove from the heat and add the vanilla. Allow the mixture to cool. Whip the whipped cream in the mixer, add the cooled egg mixture and stir. Toss the flakes.
- Put the mixture in the freezer and beat it 4 times every 1-1.5 hours. In the last beat, pour it into a stainless steel bowl, put a film resting on the ice cream and place it in the freezer.
