Recipe for a perfect shrimp spaghetti you can make at home!
Ingredient
For the broth:
- Shrimp heads
- 2 tbsp. flour
- 1 wine glass of brandy
- 2 tbsp. of tomato paste
- 1 ½ lt. of water
- 1 carrot
- 1 onion
- 2 sticks of celery
- 10 grains of pepper
- 2-3 laurel leaves
- 1 clove of garlic
- olive oil
For the spaghetti:
- 1 kg spaghetti of your choice
- 1 kg of shrimp
- 1 onion dry
- 3 spring onions
- 2 grated tomatoes
- 1 small jar of tomato sauce
- 1 clove of garlic
- 1 chopped fennel
- 50 ml ouzo
- 2 grains of pepper
- 1 laurel leaf
- 1/2 bunch of parsley
- olive oil
- salt, freshly ground pepper
Execution
For the broth:
- Start with the sauce, by putting olive oil in a saucepan and when it is quite hot put the shrimp heads into it and let them burn quite a bit.
- Then add the chopped onion, the sliced carrot, the chopped celery sticks, the spices and the garlic glove.
- Let them burn for 5 minutes and stir. Then quench with the brandy and allow it to evaporate and after that add the flour and the tomato paste and sauté for another 2 minutes.
- Add water and boil. When it boils, count 35 minutes and turn it off.
- Finally, when it cools down drain it and hold the broth
For the spaghetti:
- Chop the shrimp back with a knife and remove the intestine.
- In a large frying pan or saucepan put some olive oil and sauté the two types of onions, the fennel and the garlic. Pour the shrimp and sauté until they change color and quench with ouzo.
- When evaporated, remove the shrimps, add grated tomatoes and tomato sauce and allow to boil for 10 minutes.
- Boil the pasta in a saucepan according to the time in the package (two minutes before).
- Add one glass of water from the shrimp broth you hold and pour the pasta into the pan and stir continuously until the liquid is cooked and the pasta boils. If you find that you need more liquid, add broth.
- Salt and pepper, put the shrimps in, add the parsley, mix and transfer to a plate.
