You can serve this Cretan treat either as a side dish of a meal or as a breakfast by adding honey!
Ingredient
- For the dough
- 1 kg flour
- 400 ml water
- 100 ml raki
- 100 ml olive oil
For the filling
- 300 gr of xinomizithra
- 800 gr cream cheese (anthotiro)
- 220 gr feta cheese
Execution
For the dough
- Put in a bowl the flour, make a puddle in the center and pour in the water, raki and olive oil.
- Stir with a fork and after well with hands.
- Allow the dough to rest for 30 min.
- Separate the dough into equals parts of 70 grams, roll them into balls and place them on a plate
For the filling
- Put the cheese in a bowl and break them with hands. Roll balls with the mixture of the cheeses weighting about 70 gr each and place them on a plate.
- Take a dough ball and spread it with hands forming a small puddle in the center
- Put a cheese ball in the middle of the dough and cover
- Put some flour on the counter and roll the stuffed balls lightly with a rolling pin to spread the cheese all over and make the dough thin
- Add olive oil in a frying pan and fry the pies on each side
- Place the pies on a platter, pour some honey on them and serve as they are warm
